Ingredients:
- 1.5 lbs sirloin tips or beef tenderloin, cut into 1-inch cubes
- 2 tbsp vegetable oil
- 2 tbsp unsalted butter
- 1/2 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1/4 cup all-purpose flour
- 2 cups low-sodium beef broth
- 3 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp onion powder
- 1/2 tsp dried thyme
Instructions:
- Pat the beef cubes completely dry using paper towels to ensure a proper sear.
- In a medium bowl, toss the beef with salt, pepper, and flour until lightly coated.
- Heat vegetable oil in a 12-inch cast iron or stainless steel skillet over medium-high heat until shimmering or barely smoking.
- Add beef in a single layer, working in batches to avoid crowding the pan. Sear undisturbed for 2-3 minutes until a mahogany crust forms, then flip and sear for another 2 minutes.
- Add the butter to the pan during the last minute of searing, spooning the melted butter over the beef. Remove beef to a plate.
- In the same skillet, add the minced garlic and sauté for 30 seconds before adding the remaining gravy ingredients.
