Ingredients:

  • 1.5 lbs sirloin tips or beef tenderloin, cut into 1-inch cubes
  • 2 tbsp vegetable oil
  • 2 tbsp unsalted butter
  • 1/2 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1/4 cup all-purpose flour
  • 2 cups low-sodium beef broth
  • 3 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp onion powder
  • 1/2 tsp dried thyme

Instructions:

  1. Pat the beef cubes completely dry using paper towels to ensure a proper sear.
  2. In a medium bowl, toss the beef with salt, pepper, and flour until lightly coated.
  3. Heat vegetable oil in a 12-inch cast iron or stainless steel skillet over medium-high heat until shimmering or barely smoking.
  4. Add beef in a single layer, working in batches to avoid crowding the pan. Sear undisturbed for 2-3 minutes until a mahogany crust forms, then flip and sear for another 2 minutes.
  5. Add the butter to the pan during the last minute of searing, spooning the melted butter over the beef. Remove beef to a plate.
  6. In the same skillet, add the minced garlic and sauté for 30 seconds before adding the remaining gravy ingredients.
