Ingredients:
- 1/2 cup (113g) unsalted butter, softened
- 3/4 cup (150g) coconut sugar
- 1 large egg (approx. 50g)
- 1 tsp (5ml) pure vanilla extract
- 1 1/2 cups (190g) whole wheat pastry flour
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) fine sea salt
- 3/4 cup (125g) semi-sweet chocolate chips
- 3/4 cup (130g) M&M candies
Instructions:
- Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, beat the softened butter and coconut sugar until the mixture is light and fluffy (about 2 minutes). Stir in the egg and vanilla extract until the batter looks smooth.
- Sift in the flour, baking soda, and salt. Use a spatula to fold the mixture together until just combined; do not overmix.
- Gently fold in the chocolate chips and M&Ms. Press the dough evenly into the prepared pan using the back of a spoon.
- Bake for 18-22 minutes. Remove from the oven when the edges are golden brown but the center is still slightly jiggly. Let the bars cool completely in the pan for 30 minutes to set.
