Ingredients:
- 1.5 cups (190g) all-purpose flour
- 2 tsp (10g) baking powder
- 0.25 tsp (1.5g) salt
- 1 cup (250g) part-skim ricotta cheese
- 0.5 cup (100g) honey
- 2 large (110g) eggs
- 1 tbsp (15ml) lemon zest
- 2 tbsp (30ml) lemon juice
- 1 tsp (5ml) vanilla extract
- 1.5 cups (225g) fresh blueberries
- 0.5 cup (60g) powdered sugar
- 1 tbsp (15ml) lemon juice
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9-inch pan and line the bottom with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt until combined.
- In a large bowl, beat the part-skim ricotta and honey until smooth and aerated.
- Add eggs one at a time, mixing on medium speed until the batter is pale and creamy.
- Stir in the lemon zest, lemon juice, and vanilla extract.
- Gently fold the dry ingredients into the ricotta mixture using a spatula; stop as soon as no flour streaks remain.
- Carefully fold in the flour-dusted blueberries.
- Pour the batter into the pan, smooth the top, and bake for 50–60 minutes until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 15 minutes before transferring to a wire rack.
- Optional: Whisk powdered sugar and lemon juice to create a light glaze and drizzle over the cooled cake.
