Ingredients:
- 2 ½ cups (315g) all-purpose flour
- 1 tbsp (8g) granulated sugar
- 1 tsp (6g) fine sea salt
- 1 cup (227g) unsalted butter, chilled and cubed into ½-inch pieces
- 7 tbsp (105ml) ice-cold water
Instructions:
- In a large bowl or food processor, combine flour, sugar, and salt. Add the chilled butter cubes. Pulse or cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized lumps remaining.
- Drizzle in ice water one tablespoon at a time, tossing gently with a fork or pulsing briefly. Stop the moment the dough begins to clump together and holds its shape when squeezed.
- Divide the dough into two equal discs. Wrap tightly in plastic wrap and refrigerate for at least 1 hour.
- On a floured surface, roll the dough from the center outward until it is 12 inches in diameter.
