Ingredients:

  • 2.5 cups all-purpose flour
  • 1 cup unsalted butter, chilled and cubed
  • 1 tsp granulated sugar
  • 1 tsp salt
  • 7 tbsp ice water
  • 6 cups pitted cherries
  • 0.75 cup granulated sugar
  • 0.25 cup cornstarch
  • 2 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 1 tbsp unsalted butter, cubed
  • 1 large egg
  • 1 tbsp water
  • 1 tbsp coarse sanding sugar

Instructions:

  1. Pulse flour, sugar, and salt in a food processor or whisk in a bowl.
  2. Add chilled butter cubes. Pulse or use a pastry cutter until the mixture resembles coarse crumbs with a few pea-sized lumps remaining.
  3. Gradually add ice water one tablespoon at a time, pulsing until the dough just begins to clump together.
  4. Divide dough into two discs, wrap in plastic, and refrigerate for at least 1 hour.
  5. In a saucepan, combine cherries, sugar, cornstarch, flour, lemon juice, and salt.
  6. Cook over medium heat for 8-10 minutes, stirring constantly, until the mixture bubbles and thickens.
