Ingredients:
- 2.5 cups all-purpose flour
- 1 cup unsalted butter, chilled and cubed
- 1 tsp granulated sugar
- 1 tsp salt
- 7 tbsp ice water
- 6 cups pitted cherries
- 0.75 cup granulated sugar
- 0.25 cup cornstarch
- 2 tbsp all-purpose flour
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 0.25 tsp salt
- 1 tbsp unsalted butter, cubed
- 1 large egg
- 1 tbsp water
- 1 tbsp coarse sanding sugar
Instructions:
- Pulse flour, sugar, and salt in a food processor or whisk in a bowl.
- Add chilled butter cubes. Pulse or use a pastry cutter until the mixture resembles coarse crumbs with a few pea-sized lumps remaining.
- Gradually add ice water one tablespoon at a time, pulsing until the dough just begins to clump together.
- Divide dough into two discs, wrap in plastic, and refrigerate for at least 1 hour.
- In a saucepan, combine cherries, sugar, cornstarch, flour, lemon juice, and salt.
- Cook over medium heat for 8-10 minutes, stirring constantly, until the mixture bubbles and thickens.
