Ingredients:
- 1/2 cup (113g) unsalted butter, melted
- 1/4 cup (50g) powdered sugar
- 1 cup (125g) all-purpose flour
- 1/4 tsp (1.5g) salt
- 2 large eggs
- 1 cup (200g) granulated sugar
- 2 tbsp (16g) all-purpose flour
- 1/4 cup (60ml) fresh lemon juice
- 1 tbsp (6g) fresh lemon zest
Instructions:
- Preheat your oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides.
- Combine melted butter, powdered sugar, and salt in a bowl; stir until smooth.
- Fold in the 1 cup of flour until a soft dough forms. Press the mixture firmly and evenly into the bottom of the pan.
- Bake for 15-18 minutes until the edges are barely golden. Remove from the oven but keep the oven on.
- In a separate bowl, whisk the eggs and granulated sugar on medium speed until the mixture is pale and slightly thickened.
- Sift in the 2 tablespoons of flour and whisk until no lumps remain.
- Stir in the fresh lemon juice and zest until the batter is a consistent, bright yellow.
- Pour the filling over the hot crust, spreading it evenly with a spatula.
- Bake for another 20-25 minutes until the center is set and no longer jiggles excessively.
- Remove from the oven and cool completely in the pan on a wire rack.
- Chill the bars for at least 2 hours. Lift them out using the parchment paper, dust with powdered sugar, and slice into squares.
