Ingredients:
- 1 lb (450g) pasta shells or penne
- 1 tbsp (15ml) olive oil
- 1 tsp (5g) kosher salt
- 1 cup (250g) whole milk ricotta cheese
- 5 oz (140g) fresh baby spinach, roughly chopped
- 3 cloves (15g) garlic, minced
- ½ cup (50g) grated Parmesan cheese
- 1 tbsp (15ml) fresh lemon juice
- ½ tsp (2.5g) red pepper flakes
- ¼ cup (60ml) reserved pasta water
Instructions:
- Bring a large pot of salted water to a rolling boil.
- Add the pasta and cook until al dente (usually 1-2 minutes less than the package directions).
- Before draining, reserve at least ¼ cup (60ml) of the cloudy pasta water, then drain the rest.
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and red pepper flakes; sauté for 1 minute until fragrant but not browned.
- Toss in the fresh spinach and stir constantly for 2–3 minutes until the leaves are wilted and vibrant green.
- Lower the heat to medium-low. Stir in the ricotta cheese and Parmesan.
- Slowly whisk in the reserved pasta water one tablespoon at a time until the cheese melts into a smooth, glossy sauce.
- Stir in the lemon juice and season with salt and pepper.
- Add the cooked pasta shells to the skillet and toss gently for 1-2 minutes over low heat until enveloped in sauce.
- Remove from heat immediately to prevent the ricotta from separating.
