- 2 sprigs fresh thyme
- 2 dried bay leaves
- 3 large carrots, sliced into thick rounds
- 1.5 lbs Yukon Gold potatoes, cubed into 1-inch pieces
- 1 cup frozen peas
- 2 tbsp fresh parsley, chopped
Instructions:
- Pat the beef cubes completely dry with paper towels to ensure proper searing.
- Toss beef with flour, salt, and pepper until lightly coated.
- Heat oil and butter in the Dutch oven over medium-high heat until shimmering.
- Sear beef in batches—do not crowd the pan—until a deep mahogany crust forms on all sides. Remove beef and set aside on a plate.
