Ingredients:

  • 2 lbs beef chuck tips
  • 2 tbsp vegetable oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 packet brown gravy mix
  • 1 packet beefy onion soup mix
  • 1 cup beef broth, low sodium
  • 1 tbsp Worcestershire sauce
  • 1/2 tsp cracked black pepper
  • 2 tbsp cornstarch
  • 2 tbsp cold water

Instructions:

  1. Heat vegetable oil in a skillet over medium-high heat. Sear the beef tips in batches until a mahogany-colored crust forms on all sides. Transfer the meat to the slow cooker.
  2. Add the diced onion and minced garlic to the slow cooker.
  3. In a small bowl, whisk together the beef broth, brown gravy mix, onion soup mix, and Worcestershire sauce until mostly smooth.
  4. Pour the mixture over the beef. Cover and cook on Low for 7-9 hours or High for 4-6 hours until the beef yields easily to a fork.
  5. In a small bowl, whisk together the cornstarch and cold water to create a smooth slurry.
  6. Stir the slurry into the slow cooker. Set the cooker to High for 15-20 minutes, stirring occasionally, until the gravy is thick and glossy.
