Ingredients:
- 2 lbs beef chuck tips
- 2 tbsp vegetable oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 packet brown gravy mix
- 1 packet beefy onion soup mix
- 1 cup beef broth, low sodium
- 1 tbsp Worcestershire sauce
- 1/2 tsp cracked black pepper
- 2 tbsp cornstarch
- 2 tbsp cold water
Instructions:
- Heat vegetable oil in a skillet over medium-high heat. Sear the beef tips in batches until a mahogany-colored crust forms on all sides. Transfer the meat to the slow cooker.
- Add the diced onion and minced garlic to the slow cooker.
- In a small bowl, whisk together the beef broth, brown gravy mix, onion soup mix, and Worcestershire sauce until mostly smooth.
- Pour the mixture over the beef. Cover and cook on Low for 7-9 hours or High for 4-6 hours until the beef yields easily to a fork.
- In a small bowl, whisk together the cornstarch and cold water to create a smooth slurry.
- Stir the slurry into the slow cooker. Set the cooker to High for 15-20 minutes, stirring occasionally, until the gravy is thick and glossy.
